A Finger Lime

The Australian Finger lime is easily the most fashionable and exciting citrus product currently available in the market.

It is known as the caviar of citrus. Their aromatic skin appears in a triad of colours and the flesh holds caviar-shaped. The flavour is a lemon lime combination with herbaceous undertones. The fruit pulp´s colour intensifies during the last phase of fruit maturity.

The Finger Lime is native from Australia and it has been used by the Aboriginal people for thousands of years. It was originated without human assistance.

The Australian landscape and in particular the rainforests of the temperate are the subtropical zones that have recently been discovered as the home to one of the most fascinating, interesting and versatile of Australia's indigenous fruits ,the Australian Native Finger Lime. It is known by the botanical name of 'Microcitrus Australiasica.

And you are wondering, why do English people call this fruit “dedo de lima”, as we would say in Spanish? Well, the answer seems obvious if we look at the shape of the fruit. But, what is the real history? The fact is that some centuries ago, in Australia, parents who didn´t want their kids to introduce the fingers in their mouths, as if it were a dummy, gave their children a finger lime, and they had to suck the finger lime instead of their own fingers. And what was the result? This citrus was too acidic for children, so they preferred not to suck anything.
